If I have two switches with one VLAN is it better to trunk two ports on each to link them together, or will a single cat5 cable do if I'm sure the 1gbs ain't gonna get saturated.
I know sh*ts bad right now with all that starving bullsh*t and the dust storms and we are running out of french fries and burrito coverings.

I'm no network engineer, but my understanding was to always trunk between switches.
Career, Wife, Mortgage... my sig was better when it listed guitars and PC's and stuff!

Sounds more like you are asking about LAG's? multiple connections between them running LACP or just a single connection?
